Long Haul Trucker Loses 65 Pounds by Steering to Vegan Food
How can a Mississippi trucker who spends 14 hours a day, six days a week behind the wheel of a big rig improve his health, drop some serious pounds and eliminate costly prescription medications in the process?
Meet Bobby Anderson, whose vision of vegetables put him on the road to health.
After 21 years on the job, Bobby decided to reexamine his lifestyle and when he did noticed that in addition to racking up miles, he was also putting on the pounds.
So here’s the challenge for most drivers: Truck stops, which are famed for fast food options — typically are a trucker’s sole choice for meals during long hours. That left Anderson with little to exercise and plenty of processed food full of unwanted calories.
But, Bobbie had a plan.
Over the past year, the 45-year-old professional driver commit to change and already has lost 65 pounds and counting. The solution? He eliminated fast food. Goodby burgers, no more fries. But, the real change happened when he began cooking his own meals.
He put himself on a restrictive diet, cut out all meat, fish and dairy, and adding nutritious fruits and vegetables. And get this: He does it on the road!
He explains that it takes careful planning and a little bit of time on his day off. What’s more, Anderson’s meals are far from boring. He uses the truck’s electrical power, travels with a pressure cooker, waffle maker, hot plate and toaster.
